Gumbo Filé is used to thicken add a distinct flavor to Creole cuisine and in particular its use in gumbo. Ideal for seasoning gumbo, fish, shellfish, stew, or savory dishes that require thickening. Choctaw Indians in Louisiana were the first to introduce filé powder as an ingredient in food, specifically soups and stews. Gumbo Filé should be added just before serving, or added to idividual servings at th table.
